What do grades mean in relation to grains such as wheat and barley?

If grains such as wheat and barley don't get good grades in school they will wind up in a generic loaf of bread rather than a brand name such as Wonder. That is why grades are not only important for humans, but grains as well.
(If a grain gets very poor grades it may not be able to even get a job in a generic loaf of bread and remain unemployed or even worse, wind up as filler material in dog food)

I was expecting the answer to be more specific and I don't feel like my question was completely answered but then again, my question was broad.
