When hand stitching- always remember to use a good quality thread, a sharp needle and take your time.

If you're talking about hand sewing, the common stitches are running (and variants like even and uneven basting), backstitch, overcasting, buttonhole, blanket, herringbone and hemstitch variants.
If you go to http://www.vintagesewing.info, you'll find in the
1890's section a sewing book intended for public schools, teaching basic hand sewing techniques... quite well done.

Machine sewing uses variants of lockstitch or chainstitch, or merrowing.

Many hand-sewing stitches are also used for decorative embroidery.

The commonest hand-sewing stitches are:
Running stitch (long one are used for basting)
Stab-sewn running stitch is used for heavy quilting
Back-stitch
Herringbone (nice on heavy hems, doesn't show a ridge)
Hem-stitch (there are several varieties of this)
