What does someone study in university to become a sexologist?

If you have a Bachelors in Psychology you can get a Masters in Counseling with a specialization in Sexology. Which is a growing field at this moment. The course work involve a lot of research, it is not hard. Hope this help. This is basically the only way to practice in this field.

biology, medicine, psychology, statistics, epidemiology, pedagogics, sociology, anthropology, and sometimes criminology

I would think it would be best to major in psychology and take courses from the above as electives and perhaps a minor in criminology and also participate in research opportunities dealing with human sexuality and deviance.
