What is "tossed salad" and "melting pot"?

... also how does this relate to Americans and Canadians?

America is viewed as a melting pot as multiculturalism takes a backseat to cultural assimilation - - all the different cultures melt together into "American".

From Wikipedia: "The exact term "melting pot" came into general usage after it was used as a metaphor describing a fusion of nationalities, cultures and ethnicities in the United States after the term was used in the 1908 play of the same name, first performed in Washington, D.C., where the immigrant protagonist declared: 'Understand that America is God's Crucible, the great Melting-Pot where all the races of Europe are melting and reforming! A fig for your feuds and vendettas! Germans and Frenchmen, Irishmen and Englishmen, Jews and Russians—into the Crucible with you all! God is making the American.' "

Canada has a Multiculturalism Act, which stipulates freedom of cultural expression, religion, etc. (which isn't to say the US doesn't have laws for this; but they don't package them this way), and for which federal funds are distributed to ethnic groups to help them preserve their cultures.

The idea was that being Canadian didn't mean forgetting your origins.

The metaphor of the tossed salad then, is to illustrate the coexistence of multiple cultures within the nation's borders. In a tossed salad, you can still identify the carrots, tomatoes, etc. Another term that has been used to describe the phenomenon is "mosaic."
