So what exactly is tofu made of?
I'm starting out a vegetarian diet and I must say I'm starting out great but I am kinda iffy about trying tofu never have... what is it? and is it a taste I'd have to get used to?

I like tofu a lot, personally, and I'm not even a vegetarian. Don't use it as a substitute for meat, though. I find that it tastes better when you just eat it as tofu. It's made out of soy milk curds, similarly to how cheese is made.
If you're looking for a meat substitute, try black bean boca burgers. They're really good.

Here is the complete tofu story. First, soy beans are ground up and water is added to get soy milk. Then the soy milk is treated with an enzyme just like regular milk is treated for cheese. The curds are then collected to form the soy bean cake called tofu. Sometimes flavorings are added. The ground up soy bean that is left is called agara and can be fermented. Once fermented it is called tempeh which can be eaten also. You can use it as a meat substitute and I like it in stir fry. Fry it first like you would tofu and then add it at the end when the veggies are done.

It's soy beans. If tofu doesn't intrigue you, try tempeh. Tofu is actually better for cooking purposes if you get it extra firm. It has little, if any flavor and will pick up the flavors of anything you spice or season it with. It is quite interchangeable with meat in any Asian dish1

It's the cheese equivalent of the soy world. The soy milk is coagulated to form a solid, just like how cheese curds are formed when you coagulate cow or sheep's milk.
The less water in the tofu, the harder it gets (just like with regular cheese).
