They don't really let on to be honest, but subtle signs such as asking you more flirty questions (or ones that seem to focus on your past relationships, etc) could be a sign... they feel like they're falling for you but they want to make absolutely sure that they know what they're getting themselves into. Also, they will have become a friend of yours that you see all the time, or at least talk to a lot. I don't know that many Capricorns (myself included) who go on dates with people they've only spoken to once or twice. =)
