Easy to take to work vegan lunch ideas?

Question

I'm not used to having to bring a lunch to work with me so I'm just looking for some more ideas besides a sandwich/salad and things like microwave frozen burritos. I would much rather prepare the meal than buy frozen stuff.

bakes sweet potato with soycheese filling and crispy tofu chunks.

Sweet potato is easy to bake0 then slit the skin and stuff some cheese in just before the end.
Shallow fry bread tofu chunks til they are crispy and serve on top of the sweet potato.
Serve with steamed collard greens and definitely add soysauce to the sweet potato and cheeze- it is so good.!

Can MW to get it hot, but I do like it cold too!


Boil chickpeas and lots of garlic and til cooked. Drain.
Marinade the chickpeas in lemon juice soysauce and oil and roast
til they are very crispy.
Add to a brown rice salad with chopped green onions, sweet corn, frizen green peas ( not canned) and some hlaved artichoke hearts.
To this salad make a minted dressing - the mint is the perfect set-off for the chickpeas- make vinaegrett using whole grain mustard and good oil, then add chopped mint and sugar to the dressing.
It makes the difference.
Can add sauteed leeks to the salad too.
I love this salad- the roast chickpeas are so good.
You can substitute or also add fava beans- I love favas.

I'm a student and I always bring my lunch to save money. =]
You could really bring anything for lunch, as long as you don't mind eating it room temperature (like rice or noodles). I often bring rice and noodles that are like leftovers from dinner. In the morning, I heat the food up, since it has been in the fridge. Then I put it in my lunchbox and bring a fork or spoon or chopsticks, whatever. =) But you seem to have access to a microwave? In that case, you could really bring anything! Just heat it up at work.

My favorite portable vegan lunch is a tofurky sandwich on whole wheat or multigrain bread with a few slices of bell pepper (red is especially delicious), and hummus or vegenaise as a spread. Bring a pear or an apple (some kind of fruit) and a soy yogurt (silk brand makes delicious vegan yogurt in plenty of different flavors) for a well-rounded, nutritious meal.

I usually only cook on weekends. I make batches of soups and chili or whatever I can dream up. Then put it into single serving containers and freeze them. This week I have a barley soup, chili, and lentil soup. I also made some breakfast tofu with peppers and onions etc. Each day I just grab something out of the freezer and also usually have fresh cut veggies and hummus to round out the meal.
Another lunch I like is hummus on pita bread with sprouts and fresh spinach folded over like a taco.

Learn to cook some indian dishes (of find an indian grocer who sells some pre-made meals in pouches so you can try them first). :-)

When you're tired of Boca burgers...

Palack paneer, daal, and curried vegetables, etc. are good. Basmati rice is a must though. Flour tortillas can substitute for Naan (bread).

For sandwiches, I eat rye bread with Yve's turkey slices and mustard. If you want to make it more exciting, add hummus and vegetables to it. I also always take a banana and another fruit :)

well, i was offered 50,000 for some deaths. the deaths of my family. you see they need bodies to take the fall. now I refused, played stupid, while I was getting poisened at work. They need a port to transport drugs, cars.

what if there is a threat. a threat that is really huge. something like another terrorist attack. hmmm the underground. I was offered 50,000 dollars to keep my mouth shut. well, you see i have a problem with that. i was brought into the underground, they taught me well, what music is all about. training was great. I was poisoned. On a few occasions, but I keep on going. Now they are really close to getting what they want. I was told that canada is a beautiful country by a mason. they are ready for another attack.
The lesson is,, you should not mess with mafia affairs. would you take the money
