I make what is called rolled up chicken in my family.

Preheat oven to 350 .

You take chicken breasted slice then long ways in half making them thin, then you get a bowl crush 2 packages of ritz crackers(you can saute' green and red peppers an onions in olive oil for more flavor) then you melt 1 stick of butter and mix it with the crushed ritz (you can then add then add peppers and onions).

Then you take lime and lemon juice (they come in the lemon and lime shaped bottles at any grocery store) and add a few tbs. until the taste is to your liking. You then put the chicken on a cookie sheet and scoop ritz filling onto the middle of the chicken and roll it up. Once you have done this sprinkle salt and pepper over then and put them in the oven for about 15- 20 minutes. It is so good its a favorite at my house!!

ingredients:
chicken breasts
ritz crackers
lime and lemon juice
1 stick of butter
peppers(optional)
onion(optional)
salt and pepper

    Here are a few ideas:

    Cola Chicken

4-6 boneless, skinless chicken breast halves
    1 cup ketchup
    1 cup cola
    2 Tbsp Worcestershire sauce

Place chicken in 9x13 casserole. Sprinkle with salt and pepper. Mix ketchup, cola, and Worcestershire, pour over chicken. Cover, bake at 350 for 50 minutes.

    Easy Creamy Chicken

    6-8 boneless, skinless chicken breasts
1 can cream of chicken soup
    1-3oz package cream cheese
    1-8oz carton sour cream
    3-4 green onions, chopped

Place chicken in 9x13 dish. Sprinkle with salt, pepper, and good seasoned salt. In saucepan, combine soup, cream cheese and sour cream on low heat just until cheese melts and ingredients mix well. Pour mixture over chicken, sprinkle green onions on top. Cover, bake at 300 for 1 hour. Uncover and bake another 15 minutes. Serve over noodles or rice.

    Nacho Chicken

6-8 chicken breasts (or 8-10 chicken thighs)
    2 cans nacho cheese soup
    ¾ cup milk
    3 tbsp worchestershire sauce

Place chicken in large baking pan. Sprinkle with salt, pepper, and a spicy seasoned salt. Combine soup, milk, and worchestershire sauce in saucepan until just heated through. Cover and bake at 350 for 1 hour.

    Lemonade Chicken

    6 boneless, skinless chicken breasts
1 (6oz) can frozen lemonade, thawed
    1/3 cup soy sauce
    1 tsp. garlic powder

Place chicken in greased 13x9 casserole dish. Combine next 3 ingredients and pour over chicken. Cover with foil. Bake at 350 for 45 minutes. Uncover, pour juices over chicken and cook another 10 minutes uncovered. Serve over hot, cooked rice.

    Sweet ‘n Spicy Chicken

1 lb. boneless, skinless chicken breast
    3 T. taco seasoning mix
1 (11 oz.) jar chunky salsa
    1 cup peach preserves

Cut chicken into ½ inch cubes. Place chicken in large resealable bag. Add taco seasoning and toss to coat. Brown chicken in a little oil. Combine salsa and preserves, stir into skillet and bring mixture to a boil. Reduce heat, cover and simmer until juices run clear. Serve over rice or noodles.

    Classic Chicken

    4 boneless, skinless chicken breasts
    ¼ cup lime juice
1 pkg. dry Italian dressing mix
    ½ stick butter, melted

Season chicken with salt and pepper and place in a shallow pan. Combine lime juice, Italian mix, and butter. Pour over chicken. Cover and bake 1 hour in 350 oven. Take off cover last 15 minutes of baking.

    chicken
    bread crumbs
    melted butter

Heat oven to 450F. Brush chicken on both sides with melted butter. Roll in bread crumbs, place skin side up on baking pan. Bake 25 minutes for boneless, 45 minutes for bone in.

This is moist, crispy, easy, and delicious.

    Variations-
add parmesan cheese to bread crumbs
or add buffalo sauce to melted butter
    or use Italian bread crumbs

I feel reluctant to send this to you as you say you WANT it fast,, fast is not the way to cook, unless you work in a fast food joint. OK at any rate, I hope, in your case 21/2 hrs is adaptable for your timetable,

here r a couple of the easiest but best recipes my family just LOVES.

    preheat over to 350

put chicken in baking pan and smother with italian dressing for extra flavor sprinkle parmesan cheese on top. YUMMY cover tightly with foil,
throw it in oven for about 2 1/2 hours and u have your self a delicious meal the chicken just falls apart when u touch it with a fork. enjoy

now if u want the same delicious meal that falls apart when u touch it with the fork do all the same steps above but instead of smothering in italian smother with a bottle of bar b que sauce. cover and cook 2 1/2 hours and tah dah dinner is served and your family will be happy
