Hop down to your friendly garden store and ask. they can steer you in the right direction. Glad you love the country; it's serene, peaceful, less treacherous and lovely.

Usually you can go with evergreen plants just about anywhere. Juniper and pines such trees and shrubs are naturally left alone by deer. However, depending on what USDA Zone you are in there are many other choices. I have more questions then answers I guess. What zone are you? If you don't know you can check with your local extension office. If you're like me, we moved to the country and found out there just happened to classes at the extension office so I could take them and learn how to garden our acre and a half.

Are you looking for colored plants? Do you have a vision of winter with snow on these plants? How much snow IF any do you get over a normal winter?

This is the best time to plant bushes and trees... so that may be your saving grace.

If I had to make one of my best choices, it would be bushes that are evergreen or bushes that shed their leaves to be covered in colorful berries for birds all winter. Something like an American Beauty Bush. (A bush common to the lower south east that is coming back in popularity for its bright purple berries during winter. It used to be endangered, does well in zones 5-9. South of Maryland)

I'm a new gardener with some class background in Zone 7, and write for a newsletter part-time on growing organic and heirloom fruits and veggies.

Well if its outdoors the animals will get to it somehow.. Last winter the deer ate 2 of my red ceders and a Birch.. :S HEY WELCOME TO THE COUNTRY!
    hehe
If you want to have some nice plants in winter try forcing some bulbs inside.. Crocus or Daffodils.. I do Narcissus every winter.. Its nice having some bright spring colors in the house when the dead of winter sets in.. All they're going to need is water, and nothing will eat them.. :D

Lots of people have been in exactly the same situation as you. Dont make the same mistakes as them. Have a walk around and have a look in your neighbours gardens, if they can grow it then so can you.
