Mushroom Stroganoff. Quick simple and one of my favourites.
Risotto
Pop them in an omelette.
Chicken Argyle. I had it as a starter with a girlfriend in a hotel once. it's chicken and crab meat in cream baked in the cap of a large mushroom. It's a bit sickly actually. I prefer the Stroganoff.

They're a very dangerous source of food if you pick the wrong wild ones. My first wife died of mushroom poisoning. My second wife died of strangulation ( she wouldn't eat her mushrooms! )
