How long do you cook/bake boneless skinless chicken breast?
I am about to start a texmex chicken casserole. The recipe calls for 2 cups of cooked chicken, I am going to cook 1.67 lbs of boneless skinless chicken breast to put into the casserole. How long would you recommend baking them and at what temperature? I do not have a meat thermometer and always have issues with under cooking or overcooking the meat. Help!

It would be quicker to cook them in a non stick pan on the stove in a little olive oil. Medium heat cut into the center until done and no pink.

I just did this for my daughter this afternoon for a casserole. It is way better to poach the boneless chicken in either water or broth with celery,onion,thyme, bay leaf. Bring to a boil, reduce heat to simmer about 30 minutes. Remove from liquid and cool until you either shred or cut the chicken. It will have flavor and will not be dry.
