Does anybody know the recipe for a spanish dish called "broken eggs?"?
It seems to be sunny side up eggs (not all the way cooked) mashed up and stuffed into some sort of open roll. It is the best thing I've ever tasted-I had them in Spain. I was wondering if anyone knows what they're actually called, I had them at a cafe titled "The Broken Egg." Anybody know the actual recipe?

Hi Shelbers,the translation is - HUEVOS ROTOS * *translated literally means broken eggs However in culinary terms - rotos in a lot of cultures /languages is not far from -roast. **that is not me shouting. there are more than one way to make them. 1st they are like soft scrambled eggs. 2nd they can be lightly boiled in the shell and 'broken up' with a fork Otherwise from your description they may have been poached and broken up as the translation says. In Spain they call Huevos Estrellados (or more commonly known as Huevos Rotos)
6 eggs.
500 grams of potatoes.
¼ liter of olive oil to fry.
Salt.
Peel, wash and cut potato strips, season with salt and fry them in a frying pan with hot olive oil. Once fried remove them to a plate.
Add 4 spoonfuls of oil in an antiadherent frying pan and when the oil is hot, fry the eggs. As soon as the white sets up, add the main ingredients to the frying pan. You must cook quickly so the white of the eggs is set up but the yolk is left creamy. Then you put the mix upon the fried potatoes and break the yolk! Sometimes they fill a roll with this mixture or somtimes they mix spanish chorizo with it.
