You'll especially be interested in the parts from early in Genesis. As you know, the Bible says that God created the animals before he created Man. Since Man was an afterthought, created because God was still lonely, it's unlikely that he populated the planet with animals for Man to eat before Man was even there. Furthermore, Genesis 1:29 indicates that originally, God's plan was for people to be vegetarians. This link also discusses the likelihood that heaven if a vegetarian place, so starting now is just preparing yourself for the future!
That being said, being vegetarian isn't about not missing certain foods, it's about being willing to make a sacrifice for your beliefs. Understand that it will be a challenge and one that can only be overcome with willpower. You must decide what is important for you: the pleasure of eating the flesh of animals or your desire to not support their slaughter/mistreatment. Nobody on here can help you with that any more than we could help you get up at 5 a.m. to go for a run every morning. You need to identify your motivations and remember them.
Also, knock it off with the "health benefits." It's an excuse and you know it. Don't keep telling yourself that you have to eat meat to get certain nutrients or you are reinforcing a habit that you seem to want to give up. If you keep telling yourself why you can't, you're really being your own worst enemy. Stop. Do a little bit of research on the specific nutrients you are concerned about and you'll easily find vegetarian (and even vegan) sources of them. Focus on how you can. If you honestly want to stop eating animals, it's time to figure out how you're going to do it.
