Traditional Yellow Man Toffee

Ingredients for Yellow Man
1oz butter
8oz brown sugar
1 lb golden syrup
1 dessertspoon water
1 teaspoon vinegar
1 teaspoon bicarbonate of soda
How to make traditional Yellow Man
Melt the butter in a saucepan, and then add the sugar, golden syrup, water and vinegar. Stir until all the ingredients are melted, then boil until the mixture reaches the ‘hard crack’ stage 290 degrees F. This can be tested by dropping a little of the mixture into cold water, leaving for a moment, and then picking it up between the finger and thumb. When the finger and thumb are separated, the thread formed between them should break sharply. Stir in the bicarbonate of soda, when the mixture foams up pour onto a greased, heatproof tray, turning in the edges with a palette knife. When cool enough to handle, pull with buttered hands until pale in colour. When completely hardened, break into rough pieces.

    330g (12 oz) brown sugar
    55g (2oz) butter
    4 tablespoons of golden syrup
    1 teaspoon white wine vinegar
    1 tablespoon water
    1 heaped tablespoon of bicarbonate of soda

    Melt the butter in a saucepan.
    Add the brown sugar, golden syrup and water to the saucepan.
    Stir until all the sugar has dissolved.
    Then gently boil the mixture without stirring.
    Test how the mixture is developing by drops a small amount into a bowl of cold water. When the mixture can turn into a firm crackling ball on contact with the cold water then remove the pan from the heat.
    Once the pan is removed from the heat, mix in the small amount of white wine vinegar.
    Then add the bicarbonate of soda and stir the mixture rapidly.
    Expect the Yellowman mixture is froth up and when this happens pour into a greased tin and allow to harden.
    Yellowman, as a pale sweet toffee, is best eaten fresh. Yellowman can be eaten within five days if stored in an airtight container. Alternatively, Yellowman can be stored in a freezer.
