Can I make my pie filling today for Thanksgiving?
So my original plan was to make my entire pie today, and hope it stayed fresh for Thanksgiving.
But from the response I got from my last question, I have decided to just make my pie filling today, and then finish putting the pie together tomorrow and baking it.
do you think this is going to be ok? will my pie filling stay fresh?

Sorry, I should have included that it was an Apple pie :-)

If you made your pie to day it would be fresh for Thanksgiving. If you just want to make the filling depending on the kind of pie you are making you can mix it up cover it and put it in the refrigerator. But if you made the pie now you wouldn't be so rushed on Thanksgivings Day. Also if something went wrong and it didn't cook right (temperature of oven) you would have time to make another one.

What kind of pie is it?
It should be fine. Just cover it well and refrigerate.

yep just cover it tightly and store in the fridge. Pull out of fridge and let come to room temp. for about 1/2 - 1 hr before baking.

chances are it will be ok as long as you seal in airtight container and store in fridge, then let come to room temp before finishing pie, depends on the flavor..
