Yes, I would wrap it up in cellophane or foil and put it on a plate or pan in the fridge until Thursday morning then unwrap it and put it in cold water to finish thawing. Good luck and Happy Thanksgiving.

Yeah but you should wrap it with something in the meantime. I don't recommend leaving anything uncovered in your refrigerator.

If the bird is frozen solid as many are when you buy them, whether you remove the wrapper wont' affect it one way or the other. I would loosely cover it with saran, and let it dethaw in cold water, changing the water as needed until its totally ready to rinse, and stuff, coat with an herbed butter, wine and whatever else you like. Bake as per pound. Usually 2-3 hours, checking to see that the birds juices run clear, not pink. If they are even a little pink, don't risk it, continue baking until they run clear. Continue to baste your bird as you bake it, and make sure it sits on a bed of celery, carrots, and onions, a little wine and broth. This keeps the bird moist as it bakes, and you can use the veggies for gravy once pureed and you add in the drippings, flour, wine and cream. Season to taste and if lumpy, put in a sieve to get lumps out.
