How do u set up the smoker? Where does the water go above or below the charcoal?

the water goes above the charcoal and it makes the meat really tender and juicy cuz the water evaporates and soaks into the meat. smokers are awesome :)

To set up a smoker, you get him/her a comfortable chair, their favorite brand of cigarettes (or cigars or whatever they smoke ... keep it legal though) and a nice lighter. The charcoal goes in their lungs, obviously.

They are correct, above. But maintain the water level though. I uasually put a bottle of cheap Tariyaki sauce in mine, it gives the Chicken really good flavor, and when doing jerky, Teriyaki Beef Jerky is killer.
