When using a smoker I am smoking my turkey but?

If you cut up your poultry do u have to turn the meat or does it just sit on the rack and checked for temp over time til temp is met

the great thing about a smoker is that it is hands free. The smoke will permeate everything, everywhere. No muss, no fuss.
