Are there any sides I can cook today?
Sides I am making are:
•Creamy corn casserole
•Cheesy vegetable casserole
•Homemade mac and cheese
•Loaded mashed potatoes

Additional Details
The vegetable casserole has a few different colors when mixed- Green, orange, and white. The loaded mashed potatoes has large pieces of bacon and scallions on top. But I see what you mean.

unfortunately alsoundlike they need to be cooked the day of however one thing you could do to move things ahead is do what ive done in the past and put together your casseroles and refridgerate them after they are ready to be placed in the oven .. with the mac n cheese you could boil your noodles and drain them and if you want to finnsih it off in a casserole dish you could measure out your milk and cheese n the dish and place the noodles in the dish and cover it for the next day .. as for the potatoes you can peel your potatoes and slice them up place them n the pot you going to cook them in and place your salt n the water and cover it as well .. refridgerate it all overnite and it should be just fine and ready for you to pop n the oven and place on the stov ethe next day .. another idea is if you want to save yourself even more dishes the day of .. is placing all your casseroles n those foil pans you can get at the store ..

unfortunately all these are better if prepared on the day u intend to eat.How about a macaroni salad.I use macaroni cooked rinsed and drained.Add green olives,cukes,tomatoes,onions,mayo and salt and pepper to taste.Let it set overnight and it is good.I might add that ur menu although sounds delicious is very high in starches and carbs.

Yes,You can make them all the day before and fridge them, to save time.Macaroni cheese will freeze OK.
You need to add some colour as all of these together will look very bland on the table.They are all pale coloured.
