Just use 1/2 teaspoon of extract to replace the orange peel.

Use the extract, omit vanilla if that is what the recipe calls for. mm

You can try and just omit the Vanilla and use the Orange Extract, this would give almost any muffin recipe an orange flavor. Add about 1/2 cup of dried cranberries to any muffin recipe.
Orange zest/peel adds texture and flavor to the muffins but it is not necessary. I like the muffins with it, but if I am out I don't add it obviously. However, I do buy oranges, and then when I know I am using them, I zest the peel first onto waxed paper, then use the oranges. I then put the zest into a small spice jar and freeze it for use later when I am out of oranges.
    It works very well.

what are you using to provide the "orange" part of this bread?

    bottled juice ?

    juice concenetrate?

orange juice you squeeze yourself? if the latter, then you can get the orange peel/zest from the fruit--no need to use dried (spice rack) orange peel, if that's what the recipe is calling for. you'd need about 1.5 to 2 times of fresh orange peel over the amount called for of dried orange peel.
