What are some quick, easy dinner ideas?

My mom usually cooks the family dinner, but she's away right now, so it's just me and my dad. I'm a pretty good cook, and my dad is not so good. Anyways, we want to make dinner soon but we have no idea what to cook. We have pasta all the time since we're Italian, but something quick, easy, and tasty is great.

Please help us!

    Lazy Gourmet Chicken

    1 tbls sugar
    ¼ cup vinegar
    ½ cup soy sauce
    4 garlic cloves, minced
    ¾ tsp salt
    1 tsp pepper
    2 ½ - 3 # fryer, cut up or 2-3 pounds legs/thighs/breasts

    Combine all ingredients except chicken in a large, tightly lidded saucepan and bring to a boil. Add chicken pieces and coat each well. Keep covered and reduce heat, simmer 35-40 minutes, basting several times along the way.


    Garlicky Chicken Breasts


    1 envelope Good Seasons Italian Salad Dressing
    ½ cup grated Parmesan Cheese
    Mix these together

    Moisten 6 skinless boneless chicken breasts with water, dip into mixture, place in shallow baking dish. Bake 400 degrees for 20 - 25 minutes or until cooked through.

    Or, for just 1 or 2 breasts, just sprinkle some of the seasonings and cheese on each and bake.



    Chicken Fajita Pizza

    • 1 (13.8 ounce) can Pillsbury(R) Refrigerated Pizza Crust
    • 1 tablespoon olive or vegetable oil
    • 4 boneless skinless chicken breast halves, cut into thin strips
    • 1 teaspoon chili powder
    • 1/2 teaspoon salt
    • 1/2 teaspoon garlic powder
    • 1 cup thinly sliced onions
    • 1 cup green or red bell pepper strips (2x1/4-inch)
    • 1/2 cup Old El Paso(R) Thick 'n Chunky Salsa
    • 2 cups shredded Monterey Jack cheese
    1. Heat oven to 425 degrees F. Spray 12-inch pizza pan or 13x9-inch pan with nonstick cooking spray. Unroll dough; place in sprayed pan. Starting at center, press out dough with hands to edge of pan. Bake at 425 degrees F. for 7 to 9 minutes or until very light golden brown.
    2. Meanwhile, heat oil in large skillet over medium-high heat until hot. Add chicken; sprinkle with chili powder, salt and garlic powder. Cook and stir 3 to 5 minutes or until lightly browned. Add onions and bell pepper strips; cook and stir an additional 2 to 3 minutes or until chicken is no longer pink and vegetables are crisp-tender.
    3. Remove crust from oven. Spoon chicken mixture evenly over partially baked crust. Spoon salsa over chicken. Sprinkle with cheese.
    4. Return to oven; bake an additional 14 to 18 minutes or until crust is golden brown.
    Yield: 8 servings
