Help With Custard Please?
Well, I'm trying to make latija. It's a guamanian recipe, and it involves making this custard.
Point is, I'm having trouble making it. I've had two fail attempts, the first one over spilling from the pot, the second one, the egg had curd. So both tries I threw out, and I have only limited supplies left to make one more.
One question, how can I make the custard, and make sure that my eggs don't curd or scramble while making it? That's the one part I have trouble with.

I have never heard of the dish or recipe you are referring to, but I've made plenty of custard and custard based desserts such as creme brulle', custard pie, bread pudding, pecan pie, etc. The thing about custard is you don't want to get your eggs hot too fast. You mix up your eggs and other ingredients separately, and then you take a very small bit of the hot milk, or whatever you have going, and beat it into the already beaten eggs. This will slightly raise the temperature of the eggs so it won't be such a shock when you mix the rest of it in. Once you have done that, very slowly add the hot liquid to the eggs beating constantly. Do not throw it all in there all at once. Now you should be in good shape. Now if you are baking a custard-like dish, set your dish or pan in another pan under it with a little water in it. This helps the custard to cook gently. If you have time go to a cookbook like The Joy of Cooking, or online and do a little research on basic custard techniques. Good luck.

I did call my auntie though, an expert at this dish, and found out that she adds no eggs whatsoever. But, your advice came in handy because I made creme brulle after.

You have to let the custard boil and make sure you mix it every few minutes. Hope this helps!

all i know is mix constantly! (:
It is a dessert made by locals (Chamorros) in Guam and in the states.
