  • Can you think of meat dishes associated with a specific North American city or region?

    Focusing specifically on meat and not just any food, I am looking for something connected to a specific city or geographic area. So things like Philadelphia cheese steak, Baltimore pit beef, Chicago roast pork, Montreal smoked meat not to mention all the different BBQ and so on.

  • Does my wife or our relationship make any sense?

    My wife is a good person and I do love her but I am miserable with the life we live. It pretty much comes down to us having completely different schedules. Hers is a Monday to Friday teachers work week whereas I work nights and weekends as a Chef. We don’t even see each other for 4 days of the week, might see each other in passing for 2 days and have 1 day off together. She claims that she is not any happier about our situation than I am but we just keep living this way. It is her indifference that bothers me the most. How can she say she’s not happy if we just keep doing this going on 20 years now? I have looked for different work but I have a good, stable job for the type of work I do that has supported my family (we have 3 children) while she has been working on getting to where she wants to be with her career. We actually started out pursuing owning a business together but after having kids she changed her mind and went a different route. So now she has a life that she is happy with because she likes her job and the schedule that comes with it but I struggle to come to terms with how any wife or husband is happy when they barely even see their spouse or have any quality of life with them. And what really bothers me and has become a common arguement between us is how when that one day a week we have off together rolls around she wonders why I’m not just happy and feels like we can cram our life into this one day. I feel like we are just hanging on-for the kids.

  • Do you have any ideas for Southern foods that can be frozen and reheated?

    I am looking for either flat out classic Southern or at least Southern themed dishes that can be frozen and reheated without compromising the dish. I do BBQ (pulled pork, ribs, brisket), Corn Bread, Biscuits, Pecan and Sweet Potato Pie, Delta Tamales, Gumbo, Chicken and Dumplings, Chili etc. but am not sure about dishes like Mac and Cheese (that won't dry out), Shrimp and Grits etc.

  • Looking for meatloaf that doesn't taste like a hamburger?

    I'm not a fan of meatloaf that tastes just like a hamburger (likely because it has ketchup and Worcestershire etc.) but I can't find an actual recipe even though I've had meatloaf that I did like.

  • Does anyone know what this food is called and have a recipe?

    I'm trying to remember what something I saw on a cooking show was called. It's definitely latin (South American I think). First, there were two identical pieces of dough rolled out in a circle not too big, maybe a 3 inch diameter. Then a pre cooked filling was laid down on 1piece being the bottom and then covered with the other piece, the top. Then it was rolled out with a rolling pin obviously thinning it out and increasing the diameter but without piercing the dough at all. The whole thing was then fried in a pan one side at a time for a couple minutes. The dough puffed up and was golden on each side.

  • Why don't I like Posole?

    I've never had it before but really wanted to try it. I decided to just make it myself as all the recipes I consulted seemed simple enough. Simple enough that I can't imagine having made any glaring miscues but all said and done, I was not impressed. I really like grits and mexican flavours so I was excited for this but have to admit it was not an overwhelming success.

  • Do you have any creative/innovative or just unique food ideas?

    Although my wife and I are very experimental and open to a wide variety of foods, we find ourselves bored with our meals lately. For lack of a better description, we are looking for "ethnic" foods with strong flavours but that don't focus too much on meat. We do sushi and Japanese, we do Indian and Pakistani, we do Thai etc. and then occasionally fall back on just ordering a pizza or grilling up some burgers. We' re just in a food rut I guess and it's especially hard with having 3 kids.

    I'm a professional chef who just finished watching "Around The World In 80 Plates," a show about Chefs trying to win a traveling cooking competition. The episode I watched focused on their challenges in London England and from both a culinary and worldly perspective, I was simultaneously embarrassed about them and for them.

    I guarantee I will watch another episode but not necessarily for the right reasons.
