• Why do my boiled eggs come out rubbery?

    I don't know if I'm cooking them wrong but I'm using eggs that are definitely good to eat. I put them in warm water, set it on the stove on high, then after 15 minutes I take them out. But when I peel them, bits of the whites come off with the shell and when i bite into the whites it's all rubbery.... show more

But when I peel them, bits of the whites come off with the shell and when i bite into the whites it's all rubbery. When my mom makes them the shell comes off easily with the egg being quite slippery and tasting great while super easy to chew. What am I doing wrong?

We have frozen broccoli, cauliflower, sprouts and parsnips. We have fresh carrots, potatoes, swead, celery, leek and onions. We also have tins of mushy peas (sometimes used for mint and pea). soups must be able to be lump free for puree diets. Owners are very tight with money and won't order in anything different, I have tried ordering in sweet potatoes and celeriac but was refused. So can only use what I stated above. Any ideas?
