"Tannic acid" is not a single compound, but a mixture of compounds. It can be extracted from the bark and fruits of many plants, notably the bark of oak species, sumac, or myrobalan. It is produced from Turkish (about 50-60% pure)or Chinese (about 70% pure) nutgall. The chemistry of tannins is complex and non-uniform, and may be divided into two groups: (a) derivatives of flavinols and (b) hydrolyzable tannins which are esters of a sugar (usually glucose) with one or more trihydroxybenzenecarboxylic acids.

You will probably get a better answer if you post this in the medical category. This is one explanation: Tannic / picric acid is astringent and that's means they shrink tissue,so the acid will shrink the tissue around the burn and prevent loss of precious fluids.

These people supply tannic acid derived from Chinese galls.
