In engineering thermodynamics it is a data table of the specific volume, enthalpy, and other thermodynamic properties of liquid and gaseous water as a function of temperature or pressure.

In a restaurant it's a number of stainless steel or chrome plated metal serving dishes (with covers) that are sitting on a long table witrh recesses for the containers. Inside the recesses the staff places water on the verge of boiling and kept at that temperature by electric heat or gas heat.
