    Broccoli- raw

Carrots (the most wonderful vegetables in the world)- raw or

Chop 2-3 large carrots (cleaned and peeled) into large pieces, place in saucepan and cover with water. Add salt, sugar, and a tiny-tiny bit of ground nutmeg. Cook, covered, until all the water is evaporated, serve warm!

Both are good raw with low-fat ranch dressing!

First steam the broccoli. Then dip the broccoli in some cheese. The cheese should be the kind you use in nachos. For carrots, just dip them in a ranch dressing or cheese if you would like. Tastes really good!

Quickly cook them in boiling water for 3 minutes and take out and drain.

Chop 2 cloves of garlic and saute in 3 tbs olive oil. Add broccoli and saute for about 3-4 minutes (tossing the pan frequently). Add salt to taste.

Note that I usually boil first because I find that you cannot completely saute broccoli without burning it. You can microwave instead of boil in the 1st step.

**cook frozen broccoli on the stove in a pan w/ water. Drain. add cheese whiz. broccoli and cheese is sooo good!

**add some cooked, cut-up chicken and minute rice to the boccoli and cheese and you get a really good casserole.

**add a little butter and brown sugar to cooked carrots

**raw carrots and light ranch dressing

Stir fried with a tsp of oil with garlic and lotsa salt.

if you steam/stir fry, you can avoid using a lot of oil--heat a tsp (minimal amount of oil) at med-high, high heat, toss in minced garlic, and when it softens (but does not burn), toss in broccoli. when it's lightly coated with oil, put in 1/4 cup of water (or broth) and cover with a lid. Immediately, you'll hear that 'whoosh'' of steaming. You can do this one or two more times as necessary to cook it to the desired softness. That way, it's tasty but really healthy but doesn't taste steamed.

My fav way with broccoli is to boil them with your pasta. Drain well, then make an olive oil and garlic sauce and pour over the broccoli and pasta...
