Here's a recipe for a very easy cheesecake that my kids really enjoy as an afterschool snack. To make it really easy, use a ready-to-use graham cracker crust.

2 8-oz. packages cream cheese, softened

    1/2 cup sugar

    1/2 teaspoon vanilla

    2 eggs

    1 graham cracker crust

Beat cream cheese, sugar and vanilla on medium speed with an electric mixer until very well blended. Make sure all the cream cheese gets mixed in well. Add eggs and mix. Pour into crust and bake at 350 degrees for about 40 minutes. Refrigerate for 2 to 3 hours. 8 servings.

Hmm let's see if I can remember this recipe

this is a no bake version

1 8oz softened cream cheese (try the tub version its usually softer)

    1 8oz sour cream

1 8oz non dairy whipped topping (low fat or regular cool whip and if you want to be creative try the french vanilla or chocolate)

1/2 cup of sugar (try splenda no calories and its just as sweet)

    1 tsp vanilla

1 Kebbler prepared graham cracker crust (it saves time)

place all the ingredients in a bowl and beat on medium with an electric mixer until nice and fluffy (usually about 2 to 3 mins)

    then spoon into prepared crust

    refrigerate 2 to 3 hours

for a nice touch use fresh strawberries or your favorite to garnish (you can macerate your fresh or frozen fruit with a little sugar it's better than using that jellied canned fruit)

Hint if you don't want to use vanilla extract try using other extracts such as almond, orange, lemon, rum, peppermint (craft stores have even more varieties)

Good luck with your cheese cake
