Another Gumbo question?

I have a package of gumbo seasoning a friend gave me. What would be a good gumbo if the people you are cooking for don't eat shrimp or seafood, or okra? Please help.

Chicken or Sausage is also good in Gumbo.

You can leave those items out of your gumbo and put in any type of fowl you like such as chicken, duck, etc. We used duck one time and it was delicious. You can buy duck most of the time at your supermarket.

Season the washed, cut-up chicken with salt and pepper. Saute in a heavy bottomed skillet in 1/4 lb butter over high heat, turning to brown both sides (if butter begins to smoke or turn brown, remove pan from heat and add a tablespoon of olive or peanut oil)
