A friend of mine use to make a stew where he pureed okra and put in it. can someone please help me find ?

the recipe for this. He used beef chunks, tomatoes, and added pureed okra to it, and some other vegetables, but I can not remember what it was. Served over rice. He would not give me the recipe, and now I want it.

    Yambo (Okra Soup/Gumbo) and

    Serves 6-8

    This dish is another typically Aruban dish: Giambo (pronounced ghee-yam-bo) is also the Antillean gumbo, a thick, hearty soup. The puréed okra gives it a slippery consistency.

    Soak overnight:

    1/2 lb. salted beef

    Discard water. Place the beef in a heavy kettle with:

    2 quarts fresh water

    1 ham hock

    1 or 2 onions

    a few sprigs of parsley

    1 or 2 carrots

    1 bay leaf

    1 celery stalk

    Bring to a brisk boil. Reduce heat and simmer for about one and a half

    hours, or until meat is tender.

    Place in the simmering kettle.

    1 lb. red snapper fillets

    After a few minutes test the fish with the tines of a fork, and remove from

    the broth when it flakes easily. Make a bite-size chunks of the fillets. Remove

    the beef from the broth, cube and set aside with the fish. Strain the broth

    and return it to the fire. Discard the ham hock and vegetables.

    To the simmering broth add:

    2 lbs. okra, washed and sliced

    A few sprigs crushed yerba di hole, or fresh basil

    1/2 tsp. black pepper

    Simmer until the okra is tender. With a lele stick, or its equivalent, a wire

    whisk, reduce the okra to a purée. Return the cubed beef and red snapper

    pieces to the kettle. Heat thoroughly and adjust seasonings.

    Garnish giambo with:

    1/4 lb. cooked shrimp

    Beef Gumbo

    1 1/2 to 2 pounds boneless beef chuck roast

    2 large garlic cloves, minced

    1 small onion, thin wedges

    1 medium potato, diced

    1 celery stalk, sliced

    1 can whole tomatoes

    1 1/2 cups water

    1/2 cup catsup

    1/4 cup steak sauce

    1 1/2 teaspoons oregano

    1 teaspoon hot pepper sauce

    1/2 teaspoon salt

    1/2 (10 ounce) package frozen baby okra, thawed

    1 to 2 teaspoons gumbo file (optional)

    Trim meat and cut into 1-inch cubes.

    Combine all ingredients except okra and gumbo file in Dutch oven. Bring to a boil, reduce heat; cover and simmer for 1 hour and 20 minutes or until beef is tender.

    Stir in okra and gumbo file; heat through, without boiling.

    Serve over hot, cooked rice.

    Sounds like Bamia stew. It's East Indian if that's any help.

    1lb stew meat (lamb or beef)

    •1 pound frozen okra

    •16 oz canned crushed tomatoes

    •4 oz. canned tomato puree

    •1 medium onion, chopped

    •2 cloves garlic, crushed

    •1/2 teaspoon cumin

    •1 teaspoon coriander

    •1/8 teaspoon allspice

    •8 cups water

    •salt and pepper to taste

    •2 tablespoons olive oil

    Preparation:

    In a large saucepan, brown meat with olive oil. Add onions and garlic.

    Add crushed tomatoes, stirring well with meat, garlic and onion. Add cumin, coriander, salt and pepper, and allspice. Add water and tomato puree. Stir and combine well.

    Add okra and bring to a boil.

    Reduce heat to low and simmer for 2 hours, or until meat is tender and done.

    The sauce should thicken as it cooks. If it does not, add 1/2 cup all purpose flour.

    Serve bamia with white rice and a salad.

    Was it a gumbo?

    This chicken with pureed okra, you can substitute the chicken for beef chunks.

    Gumbo?

    When shrimp are added, it's shrimp gumbo.

    When we went to New Orleans, my husband talked for days about getting gumbo. When we got off the train, about the first thing we did was go into a little restaurant, where he ordered gumbo for all of us, kinds included. It was a purreed something. I thought it was awful, but every one has a different taste.
