Duck and seafood Gumbo over rice
5 to 6 ducks boiled slow then, deboned
3 onions diced
1/2 c oil
1 1/4 c self rising flour
5 llbs of peeled raw shrimp
3 llbs of raw oyster cleaned
1 lb andioulle sausage diced
5 cups of Okra that has been browned in oil, salt n pepper and drained(no corn meal!)
Make a roux from the flour and oil, stir on med till dark brown, toss in onions. Cook till soft, add the duck brothe little at a time till well mixed. bring to a boil, add sausage, cooked okra, salt, pepper, cayenne. Taste adjust saseasonings. Add the pieces of duck to the pot. Let cook till reduced a little, add shrimp bring to a low boil. Now gently add the oysters stir gently not to tear up your oysters. Cook about 15 min. Turn off. Let the pot of Gumbo set for an hour before serving. Better the next day!!!
Shoe Peg Corn Casserole
4 cans shoepeg corn or white corn
1 can green chiles (diced)
8 oz cream cheese (1/2 package)
1 cup milk
1/2 cup butter
Melt cream cheese and butter with milk; mix all ingredients together; bake, covered, for 45 minutes on 375°F, then uncovered for about 5-10 more til it's all bubbly! Let is set for 30 minutes or more before serving...
1 12-ounce package fresh or frozen Ocean Spray Cranberries, rinsed and sorted
1 unpeeled orange, scrubbed clean, cut into 1 to 2 inch chunks
2/3 to 1 cup granulated sugar
n Combine the cranberries, orange pieces and sugar, to taste, in a food processor and process until the mixture is rough textured. Transfer to a storage container, cover, and refrigerate or freeze until ready to use.
