Next Iron Chef (10/4) Chef Freitag's Beef Stew......HELP?

Question

Food Network is not posting the recipes (yet?) for the new Next iron Chef. Does any one have a recipe for Beef Stew (the base made with stout beer) that comes out looking/tasting close to what Chef Freitag did on Sunday night? Thanks for any input!

3 Celery sticks, chopped

· 3 diced carrots

· 3 Small onions, finely diced

· 3 knobs of butter. Size to taste.

· 2 tablespoons of Sea sale, or any sale. I like this one though.

· 1.5 lb of cubed beef.

· 1 lb. cubed pork.

· ½ liter of a red wine, rich and full if possible. Like a bordeaux

· 3 tablespoon Herbes du Provence. The king of spices. Goes great on everything

· 2 tablespoon Garlic Powder

· 2 tablespoon Onions

· ¼ teaspoon Nutmeg, grated fine

· 2 tablespoon peanut oil

· 2 cup water

· 1 sprig rosemary

· 1 sprig thyme

· 1 sprig sage

· 1 teaspoon cumin seeds

· 2 cups Wild Mushrooms, Whole

· 4 clove Garlic, Chopped

· 1 can Diced Tomatoes
