I have made toffee for several years at home, this year it was much harder then others, what happened?

    Hi Ally and Happy Holidays to you,

    The most common thing that perplexes the "hardening of candy" is that most people don't use a candy thermometer. I made a few in the past and never came out just right, although my starving gang would devour them anyway :)

    It's a great tool to have. The same way you make the toffee/brittle, you can make caramel for

    apples and tons of recipes. Ask Santa Claus for one!

    old ingrdients are usually the reason, if you use an oven it could be loosing heat as well
