Recipe for potluck at school?
We're doing potluck at school and I'd like to make something good, and preferrably not too difficult. It will not be warmed up, so something that would be cold.

I make these all the time and people always think they are something are hard to make and delicious. Not too spicy either!

1 pkg. flour tortillas
8 oz. soft cream cheese
Chopped jalapeno (or chili) peppers
Mix cream cheese with finely chopped jalapeno peppers to taste (approximately 2 tablespoons per 8 ounce container). Spread mixture on flour tortillas. Roll up and slice about 1/2 inch wide pieces. (The pinwheels look nicer, if the cheese mixture is spread about 1/8 inch thick before rolling and slicing.)

"Trash Bag" Taco Salad Recipe
3 pounds ground beef
3 envelopes taco seasoning
3 heads lettuce, shredded
3 cups (12 ounces) shredded cheddar cheese
3 cups chopped tomatoes
2 cups chopped onion
3 cans (4-1/4 ounces each) chopped or sliced ripe olives, drained
2 cans (15 ounces each) Ranch Style beans (pinto beans in seasoned tomato sauce)
1 package (16 ounces) corn chips
1 bottle (16 ounces) Catalina salad dressing
1 jar (12 ounces) salsa
Brown beef; drain. Add taco seasoning and prepare according to package directions. Cool. Toss with remaining ingredients in a large plastic bag or container. Yield: 40-50 servings.
