    Favorite Answer

    Caramels or Toffee

    1 c white sugar

    1 c brown sugar

1 c white corn syrup (Karo)

    2 c 18% cream

    5 T butter

    1 t vanilla

    1/2 c toasted almonds, optional

Combine 1st 5 ingredients in heavy saucepan. Heat. Stir constantly to 248 degrees or medium stage(*)

Remove from heat. Stir in vanilla and nuts. Pour in buttered 8x8x2" pan. (**). Cool. Makes 1-3/4 lbs.

(*) If you don't have a candy thermometer, drop a bit of syrup in cup of cold water. If it forms a soft ball, it is soft-ball stage, forms a firmer ball, it's medium. If it forms fast it is hard-ball stage and if it hits the water and strings, it is crack-ball stage.

(**) I lay parchment paper on a cookie sheet and pour it on.

I would buy it but I make myself work for it (so I'll eat less).

Someone else might want to correct me on the different stages. Tkx

If you don't like toffee, caramels etc, then maybe someone else can use this recipe.
