Yellowstone is in Wyoming and not Utah and I doubt that alligator is sold there as it has nothing to do with the area . . .
The only time I have had gator was in gumbo and gator tacos (yum) and it was gator sausage. Gator sausage is mixed with a lot of pork fat because gator meat is extremely lean . . .
