There are multiple time zones in the United States. The show you're referencing is on at 8:00 in the Eastern Time Zone, which is 7:00 in the Central (the "c") time zone.

The continental US has 3 basic time zones. Hawaii is 2 hours behind the west coast states. So the US has 4 time zones altogether.
I live in California, which means a show at 8/7pm central plays at 8pm for me and 7pm for someone in Illinois. They're 2 hours ahead, but 6pm would be too early for the prime time shows. They would be just getting home or sitting down to dinner.
A New Yorker, on Eastern time, which is 3 hours ahead of me, would probably see the show at 8pm their time, and thus be 3 hours ahead of me in terms of knowing what happened on the show.
