How much should I eat to maintain a healthy weight?
The BMI chart says that at 5' 7", I should weigh between 120 and 155 lbs, but I've found that I can only eat one small meal per day to maintain a weight of 160 lbs, so what gives? I do bike, probably only like 10 minutes per day, and walk, maybe around 30 minutes per day, at least.
I find that I have to be hungry all the time. I've had my blood work checked and the doctor says I'm fine.
Doctors say I'm normal.

This is not normal. You should be able to eat 3 normal meals and maintain weight.
