My first yr persimmon sprouts planted in early spring went from green to bare in the fall. Is this normal or concerning?

Persimmon are deciduous trees, so yes, that's normal. They are meant to lose their leaves.

Is it an American or Japanese persimmon? The Japanese ones aren't as cold hardy, and all the while it is still young may need some protection when it's very cold. They should be fine without protection once they reach a decent size, though.
