    You can get one bread or many breads. The latter (breads) is the plural of bread.

    Yes, in this context it's fine, as it means 'types of bread', not a heap of loaves.

    sort of like fishes and peoples.  The idea of fish as a thing is that one fish and many fish are the same word, but fishes means different types of fish.  Same with people: people is person in plural, but people also means a nation or clan or something such as that (a "type of person") and there can be multiple peoples in that meaning.  So bread can be breads in the same way, and means "types of bread" rather than bread the stuff itself.

    Not to be confused with bread as a plural:" the banquet need many loaves of bread ".
