Will the Tokyo Olympics merch be changed to have 2021 on them?
What would they do with unsold merch that has 2020 on them?

Knowing the Japanese, they prepared early. I suspect a lot of items, like the merchandise, medals, building signs, etc. have already been made. It would be very wasteful to trash all of that and make new ones.
Also, there will be a global slowdown, so factories, printers, shippers, and so on won't be able to quickly ramp up production to levels they used to have. Making everything new will be very hard for the foreseeable future.

No their merchandise will still say 2020 Summer Olympics, mainly because it was cost too much ( at least in their opinion to remake it all with the date 2021 instead of 2020). I also think that a lot of people will save them because they think that they will be valuable in 20 or 30 years, but given that a lot of people will do it, they won't be worth very much.

The only comparable of recent memory was the 2001 Ryder Cup (golf) which was moved to 2002 due to travel concerns in the aftermath of 9/11. Merchandise/teams/ were not updated.
