I want to work in fine dining as a server but wine and cocktail knowledge intimidates me?

    It's not that big a deal. Many fine dining restaurants employ a sommelier to suggest wine choices to the diner, or to code the menu with recommended wines for each entree.   Similarly, the restaurant will likely have a cocktail and aperitif menu. If a customer asks for something off menu, tell him you will check with the bartender to see if it is available. When you check with the bar, ask about the brands of liquor with which it will be made, and the price. Hint: concentrate on learning to "READ" customers. It's good to know the motives behind their questions.
