Why wasn’t Eli Manning called in the grasp before he threw the great David Tyree Super Bowl pass ?

Because the refs had money on New York.

Because no quarterback has ever been called "in the grasp" ever.  It's a pointless rule.  Refs have to give the QB a chance to escape because QB's like Michael Vick, Cam Newton, Randall Cunningham, and others put butts in the seats by making amazing escapes, so "in the grasp" can't be called until well after the quarterback is already down.  Besides, by the time a QB is legitimately "in the grasp" the defender has no time to react to a whistle - he's going to tackle the QB anyways.

You get 1 step, remember.  If the QB throws the ball and you are less than 1 step away from hitting him, you can still hit him.  "In the grasp" is 0 steps, by definition, so the call won't actually protect anyone from injury risk.

Because the defender didn't have control of him.

Because he absolutely 100% should NOT have been called in the grasp.

The defender who grabbed his jersey did so from behind a block and was almost certainly going to lose that grip, and did so almost immediately.  Manning was in no danger, and even in a regular season game calling that play dead would have been a blown call.  But in the playoffs and especially the Super Bowl it's pretty well known that the NFL tells their refs to be more lenient and let the teams play through all but very clear penalties.

The ref had reservations at Hardees after the game.

Sometimes they do, sometimes they don’t.  That’s why they play the game.
