Its to bring the idea of the authentic cuisine of the restaurant.

A lot of restaurants use 'different' vessels to present their 'dishes' on, its an upcoming trend.

Using banana leaf is how many people traditionally in the tropical areas of Asia and not just Singapore eat their meals. Plates and dishes were known, but mostly used by the rich or city people.  If you live out in the countryside, banana leaves are an endless supply and free. It's like disposable natural biodegradable paper plates and you don't even need to wash them after the meal.

It is more authentic and fragrant and has been a long tradition.
