do I peel beets before or after cooking?

Well, I've boiled them and then their easier to peel [wearing gloves] to be used in salads or pickling.
If roasting them, just 'top + tail' them, wipe them with kitchen paper, cut into wedges, roast on a oiled sheet pan, adding your choice of seasonings / herbs.

If I'm boiling of steaming them I always do it afterwards by grabbing them one at a time when barely cool enough to handle and running them under the cold tap over a sieve. The skin rubs right off. Sometimes the beet shoots out leaving you holding a jacket of peel!
