Is this appropriate?

A gift of a moonstone ring to a friend who’s a full time support worker, who sometimes helps with painting over weekends, for extra money?  Or is a cook book with international recipes a better idea?  She’s a single mum with a young adult daughter living with her.  They own their own apartment.  So there’s not a lot of money.  Maybe I can give her the moonstone ring and the cook book?  They’re both beautiful gifts.

If you have the money to get both, you should! Cookbooks are reliable for inspiration in the kitchen, and seeing as moonstone tends to be rather inexpensive but quite gorgeous, I would say they're both quite worthy. Either way, she would absolutely be reminded of you when looking at either item, as they're quite unique and thoughtful.
