Why was Frank Zappa so popular, his music seems so intelligible, it had no rhythm?

Zappa et al. were popular among those of us who enjoy the bizarre.  Much of his music was quite complex, with rhythms that weren't readily apparent to some.  To me, he was like a more extreme Incredible Bonzo Dog Doo-Dah Band.

He wasn't popular. He enjoyed a dedicated niche audience.

Also, you need to listen to more Zappa if you think his music had no rhythm.

A lot of it is experimental Jazz which is as you described but lots of his songs are not like that. Try Valley Girl or Happy Together or Oh No!!
