    A check valve can be made of many different materials. The most popular is rubber both natural and synthetic. Some are plastics, metals and/or  glass. The material of the valve must be impervious to the effects of the medium being checked.

    It depends very much on the use. They can be made of glass for some laboratory applications. For domestic applications they can be made of plastic, brass, bronze or cast iron. In industry they are made from brass, bronze, cast iron, mild steel, stainless steel, plastic, titanium and in one case I know of steel with gold plating. Internally you will find some with nylon, elastomer or teflon seats.

    Large water pipes use iron/steel

    If the liquid is acid, probably something like Teflon

    In blood vessels, you might use human or animal skin.

    So it's size and liquid driven.
