What's the best toppings for homemade nachos?

this is how I make nachos.
First, the salsa...
One can of petite diced tomatoes with mild chilis
One small can of corn
One small can of drained mandarin oranges
1/2 can of drained and rinsed black beans
Two slices of red onion, chopped
One small can of sliced black olives
As much fresh cilantro as you like
The juice of 1/2 of a lime
Then, the chicken or ground beef. Sautee and shred chicken or brown ground beef. To either, add some chopped tomatoes and sprinkle with cumin to taste and cilantro to taste. Preheat the meat before assembling nachos.
Cheese...I blend sharp cheddar with Jack cheese, sometimes with jalapeños.
The trick to making killer nachos is to NOT dump the ingredients on top of a pile of nachos....but to layer the chips and ingredients in several layers...
Such as... a layer of chips, a THIN layer of cheese, a THIN layer of meat, a THIN layer of salsa, then repeat the layers, ending with cheese. Serve with salsa on the side.

I can't have nachos without jalapenos.
Refried beans are good, you can add them on top or serve as a dip.
