When do you use the beater attachment when using a stand mixer?

The bread paddle and the hook are obvious, but today I was making cookies and used the beater and everything stuck to it. I was mixing sugar (brown and white) and eggs and butter.

    Perhaps your dough was a little thick?  As long as its mixed well, just scrape it off the beaters.

    The beaters are for whipping things like cream or egg whites.  Generally speaking, use the paddle attachment for cookie dough.

    When you cream butter and sugar together, yes it WILL stick to the beater.  Expect that. Stop the machine, and scrap much of it (you don't have to get it all off) back into the bowl, then continue creaming.

    Start with the butter, beating it to make it really soft (and scraping it off as needed).

    Gradually beat in the sugar.

    And once that mix is nice and fluffy, THEN add the eggs, once at a time.

    Still using the beater attachment.

    If you have a whisk attachment, THAT is best for making meringue out of egg whites, or whipped cream out of heavy cream. If you don't have a whisk attachment, just use the beater attachment.

    You use it for batters, cake or cookie, things that are thinner than bread dough and thicker than whipping cream. Yes, things stick sometimes. But they're not hard to scrape off.

    when you want to incorporate air into whatever you are mixing. 

    You can and sometimes have to use both the wire whisk and the paddle beater. 

    Generally batters like cake batter, cookie dough you would use the paddle.  For egg whites, whipping cream you would use the wire whisk.  If you are making something that requires you to beat eggs and sugar until it reaches the "ribbon stage" you would use the wire whisk.

    Did you read the instructions? The hook is for bread dough, the flat beater is for batter, and the wire whisk is for mixing liquids. The company I work for produces the wire for the whisk for Kitchen aid mixers.
